Your air conditioner is obviously not going to operate totally silently. No mechanical system does. That being said, you should have a general idea of just how noisy your system is when you are using it. Hissing is another sound that you really don't want to hear coming from your air conditioner. If you can hear hissing, it could be the sound of refrigerant escaping from your system. Because your air conditioner requires a certain amount of refrigerant in order to function properly, you will likely wind up paying more for a weaker performance from your system. You also put the compressor at risk by allowing the leak to continue. Alternatively, you could also be hearing air escaping from your ductwork, if it is leaking.

Finally, keep your ears open for screeching. If your AC sounds like a banshee having a bad day, you could have insufficiently lubricated components in your system. You could also have a slipped fan belt, or some other relatively minor issue. The only way that you can prevent any unnecessary damages to your system is to have any and all issues professionally evaluated as soon as you can.
